I've wanted to try pickled eggs for a while, but I can't seem to find anybody that sells them, except some haggard online
country stores. So, I decided that I would make them myself. I did some research online to find a recipe but none of
the ones I found suited my pickling taste so I decided to combine parts from three different recipes. This is the final
recipe I used in case you wanted to try this on your own.
Pickled Eggs
- 12 Eggs
- 6 cups White vinegar
- Peppercorns
- 1 Garlic Pod
- 1 Sweet Onion
- 1 Can sliced red beets
- 1 Large glass jar
First thing you do is hard-boil the eggs. Fill a pot large enough to hold 12 eggs. Place eggs in pot and fill with cold
water so that the water is about one inch above the eggs. Cold water is important because it makes the white part of the
egg fluffier. Bring them to a boil, then cover and put on low and let them simmer for 15 min. Next, remove eggs from
heat and drain water and run cold water over the eggs, peel and place in large glass jar.
While the eggs are simmering it's a good time to slice your onion, and peel your garlic cloves. Put everything into a
pot (everything but the eggs), (I used the same pot that I boiled my eggs in) and bring to a boil. If you don't want to
use beets you can just use the beet juice. Once it boils, remove pan from heat and let it sit to cool. I put the pot in
the freezer for about 7 minutes to help it cool faster.
Once mixture has cooled, pour mixture over the eggs in jar. Lightly stir eggs with hand in the jar so the onions and
garlic get under the eggs. Seal jar and put in fridge. Wait at least two days before eating so the eggs can get nice
and good. You might need to open the jar after about an hour in case any pressure has built up. I will update this page sunday night after I open the jar and taste one! Who ever comes over to the apartment has to try a pickled egg and have their picture taken, so if you aren't willing to try a pickled egg you cant come over, they ARE vegan and sXe friendly so no excuses!
